I love the versatility of sweet potatoes, which shine in this spin on a classic Thanksgiving food.

Velvety smooth in texture, this Sweet Potato Cheesecake is bursting with autumnal flavors of cinnamon, brown sugar, and of course, sweet potatoes. Roasting the sweet potatoes in the oven first helps to bring out their natural sweetness, and makes such a difference in the overall flavor.

The key to this recipe is in its preparation, and I’ve included my best tips to help ensure cheesecake success, gleaned from some of the best bakers I know. Having all of your ingredients at room temperature is paramount to achieving the supple, creamy texture of a perfect cheesecake.
