
Sear the chuck roast in a pan with the oil. Get the oil nice and hot and brown all sides of the chuck roast. Season with salt and pepper to taste while searing.
Place the chopped garlic and onion on the bottom of the crock pot.
Once seared, place the chuck roast on top of the garlic and onion in the crock pot.
Place carrots, potatoes and broth (if desired) on top and around the beef in the crock pot.
Cook on high for four to six hours or low for eight hours. Roast is done when you can twist a fork in it and it shreds nicely. Potatoes and carrots will be cooked and easy to cut with a fork. Enjoy as is or serve with green beans or another side vegetable and/or bun.
Cooking Tip: You can double the recipe to have more leftovers to create at least three to four more recipes for the week!
