Southwestern Beef Wrap

Leftover pot roast gets a punch of flavor from salsa. A quick tomato-corn relish gets folded into a tortilla along with the leftover beef for a hearty handheld meal.

 23 lbs Leftover Beef Pot Roast
 1 Medium OnionQuartered
 3 tsp Minced Garlic
 ¾ cup Water
 1 tsp Salt
 ½ tsp Pepper
 2 Jars (16 oz) of Chunky Salsa Divided
 8 Flour Tortillas (10-inch diameter), Warmed
 Fresh Cilantro, Optional
Tomato-Corn Relish
 1 cup Frozen Corn, Defrosted
 1 cup Fresh Tomato, Chopped
 2 tbsp Fresh Cilantro, Chopped

In a microwave safe container, take the leftover pot roast beef and mix in 1/4 cup salsa. Mix well. Cover and microwave on High 8 to 10 minutes or until heated through, stirring once.

While the beef and salsa mixture are heating up in the microwave, make the Tomato-Corn Relish by mixing the ingredients in a medium bowl and stir in 1/4 cup salsa.

Take the heated beef and salsa mixture and add to warm tortillas, by leaving about 1-1/2 inch border around the edge. Then top beef with about 1/4 cup of the Tomato-Corn Relish. Fold right and left sides of tortillas over filling; fold bottom edge over and roll up. Garnish with cilantro, if desired.
