Rosemary Smashed Buxton Potatoes

Ingredients
 3 lbs red potatoes (I highly recommend Buxton red potatoes from Norkota Packers in Buxton, ND)
 ¾ cup water
 ½ cup canola oil
 2 tbsp fresh rosemary, stems removed, finely chopped
 Kosher salt (one generous pinch per potato)
 Black pepper (one pinch per potato)

Preheat oven to 500 degrees. Line a baking sheet or large baking dish with aluminum foil.

Place whole potatoes on the sheet or dish. Pour the water into pan and cover with aluminum foil. Bake for 30 minutes. Remove potatoes from the oven, uncover and let cool for 10 minutes.

Drizzle ¼ cup of oil over the potatoes. Use a potato masher or the bottom of a baking sheet or frying pan to smash each potato. Drizzle the remaining oil over the smashed potatoes. Sprinkle each potato with rosemary and season generously with salt and pepper.

Return potatoes, uncovered, to the 500-degrees oven and bake until the flesh is golden brown and the skins are crispy, about 40 to 50 minutes.
