Angel Food Cake

CGND Volunteer Kristi Melvin shared her favorite angel food cake recipe that has always been a special treat in her life. Kristi said that when she meet her husband, his grandma, Carrie Melvin, made the best angel food cakes around. Kristi remembers how she was a quiet lady and loved to make angel food cakes for family and friends. When Carrie was 99 she still made Kristi an angel food cake for her birthday. Kristi says that she was lucky enough to learn Carrie's special tricks to make the angel food cake just right. Kristi has now passed the love of making angel food cake on to the next generation. Kristi and her family loves to make Carrie's angel food cake for birthdays and on Easter Sunday.

Yields16 Servings
 1 ½ tsp Cream of Tartar
 1 ½ cups Egg Whites
 ½ tsp Salt
 1 tsp Vanilla Extract
 1 tsp Almond Extract
 2 tbsp Cold Water
 3 ¼ cups Granulated Sugar
 2 ¾ cups Cake Flour

Beat with mixer the following ingredients:

- Egg Whites
- Cream of Tartar
- Salt
- Vanilla Extract
- Almond Extract

Add in two tablespoons of cold water and beat until soft peaks form. Continue to beating while adding:

- 1 Cup Granulated Sugar - in small amounts at a time

Be careful not to over beat. Scrape sides gently.

In another bowl, sift together three times the following:
- 1-1/4 Cups Cake Flour
- 3/4 Cup sugar

Next, with a wire whisk fold in the Cake Flour and Sugar mixture that was sifted together in three to four parts.

Then, pour final mixture into angel food pan. Cut through the mixture in the pan with a rubber spatula to remove all air bubbles.

Bake at 375 for 10 minutes.

Reduce heat to 350 and bake for 25-30 minutes longer.

Invert pan while cooling and let it cool for two hours before removing the cake.
